Have you heard of the "Nine Great Banquet Dishes" of Shaxi cuisine in Zhongshan? Songziyu( pine nut fish) is one of the highlights. The whole fish is carved with intricate cuts and deep-fried to resemble a pinecone, then drizzled with a glossy sweet and sour sauce.
